Stuffed Portobello’s

4 mushroom caps{{more}}

1 cup broccoli buds blanched

1 zucchini diced

1 yellow squash -diced

1 onion diced

1 cup cauliflower buds blanched

1 tomato diced

¼ cup parmesan cheese

½ cup bread crumbs

1 garlic clove chopped

½ cup olive oil

½ stick unsalted butter

Brush olive oil on mushroom caps. Dice onion and set aside on its own. Chop garlic and dice zucchini, yellow squash and tomato. Combine in a bowl and set aside. Blanch broccoli and cauliflower buds in boiling water and set aside. Set oven to 350 degrees. In a medium sauce pan, melt the butter. Add onion and sauté for two minutes. Add zucchini, yellow squash, broccoli, cauliflower, garlic and tomato. Toss for five minutes over medium heat. Add bread crumbs. Top with parmesan cheese. Place mixture in mushroom caps evenly. Bake for 20 minutes in 350 degree oven.
